In this selection you will find our best three wines to be matched to the Queen of Pasta “La Carbonara”.

Pasta alla Carbonara is one of the most difficult but fun pairings that I know.

This recipe has many different and diametrically opposed flavors in balance with each other.

There is the salty and fat of pork cheek, pecorino with its characteristic flavor, the aromaticity and light sweetness of the eggs, the pungency and spiciness of pepper. Furthermore the body of the dish is quite important, a white wine in some cases could be overwhelmed while a red wine could be too much.

Personally I love to combine the Carbonara with rosé sparkling wines, orange wines or the legendary Cerasuolo d’Abruzzo, all wines that with their characteristics are able to degrease the dish, have the right softness to correctly balance the flavor of the dish and have those fruity notes and right structure that are able to make the most of our Carbonara.
